Ingredients
200 g red beets, 5 eggs
100 g honey
200 g almonds (ground)
100 g whole-grain spelt flour
Preparation
Peel the red beets and finely grate (ideally, wearing rubber gloves). Separate the eggs and whisk the yolks together with the honey. Slowly blend in the red beets, almonds and flour, then stir thoroughly. Beat the egg whites until stiff, then carefully fold into the mixture. Pour the completed dough into a greased baking tray, then bake in a preheated oven with circulating air at 170°C for approximately one hour until golden brown.
